	Curried Chicken Salad
	Ingredients: 3 cooked boneless skinless chicken breasts (4-5 ounces each; see Note) 4 medium celery stalks, finely diced 1 medium roasted red bell pepper, finely chopped 1/3 cup chopped walnuts 1/3 cup raisins 1 tablespoon freshly squeezed lemon juice 1 tablespoon extra-virgin olive oil 1 teaspoon salt 1/2 teaspoon pepper 2 tablespoons curry powder 1 1/2 cups good quality mayonnaise Directions: Note: Chicken breasts may be grilled, pan-seared, baked, poached, or even pre-cooked from your local supermarket.
